What are your family’s top 3 favorite meals?

My top three favorite meals are classics:

Pizza, Lasagne, and the hearty Irish stew known as Coddle.

Each dish holds a special place in my heart, from the gooey indulgence of pizza to the rich layers of lasagne.

But today, let’s spotlight on Coddle, a warm, nostalgic dish perfect for cold evenings.

Simple Coddle Recipe

Here’s a quick recipe for this Dublin favorite:

Ingredients:

  • 12 sausages
  • 6 slices of bacon, chopped
  • 6 large potatoes, peeled and sliced
  • 1 onion, sliced
  • 3 carrots, sliced
  • Lots of fresh parsley

Instructions:

  1. In a large pot, throw in the potatoes, onion, carrots, sausages, and bacon.
  2. Cover all ingredients with water.
  3. Add lots of parsley.
  4. Bring to boil and simmer on low heat for 90 minutes until everything is tender and flavorful.
